Whole Wheat Waffles


In a small bowl, mix two tablespoons of chia seeds with 1/4 cup of warm water and set aside for fifteen minutes.  Or you can grind two tablespoons of flax seed.

In a large bowl mix 1 and 3/4 cup whole white wheat flour or spelt flour or whole wheat pastry flour with 2 cups almond milk, 1 tablespoon baking powder, 1/2 tsp salt, one tsp vanilla extract, 1/2 tsp cinnamon, and two tablespoons of soaked chia seeds or the ground flax seeds.  Mix thoroughly and let rest for ten minutes.  Ladle onto your waffle iron.  

 

Serve with diced kiwis, diced strawberries, or blueberries.
