Tofu Scramble



One packet of extra firm tofu, drained of water and coarsely crushed

Two cloves of garlic chopped

One small onion chopped

One red pepper, chopped

One tablespoon of ground cumin

One teaspoon of salt

½ teaspoon turmeric


one tablespoon of miso (optional)

Olive oil

 

In a large skillet heat one teaspoon of oil.  Add garlic and onions and salt.  Cook until onions are translucent.  Add the cumin.  Let it cook for 30 seconds.  Then add the tofu and miso.  Mix well.  Add the turmeric at the end.  Mix well.
