Strawberry Rhubarb Crumble

This recipe can really be made with any fruit: apple, blueberry, peach, raspberry, fresh or frozen, etc

Prep time: 15 minutes

Cook time: 30-40 minutes

Serves: 6


Two cups of chopped strawberries

Three ribs of rhubarb, chopped

Two tablespoons of agave nectar

½ teaspoon of salt

One teaspoon of vanilla extract

One teaspoon of cinnamon

Two tablespoons of lemon juice

Two tablespoons of tapioca

One and 1/2 cups of granola (I like Bob’s Red Mill Honey Oat Granola.  It has five ingredients in it)

Preheat oven to 350 degrees.  Combine all the ingredients, except the granola, in a large bowl and mix well.  Ladle the fruit mixture into small ramekins that are oven-safe, about half way up each ramekin.  Alternatively, you can place the entire mixture in a glass pie plate or glass baking dish.  Cover with aluminum foil and bake for about 25 minutes.  Then, using oven mitts, take the baking ware out of the oven, remove the aluminum foil and coat the top with the granola and place the ovenware bake in the oven, uncovered for an additional ten minutes.
