The plant-based Doctor Mom 

Spinach or broccoli Quiche


2 cups oat flour

Raw, unsalted walnuts

One whole ripe avocado, smashed

One large box of baby spinach or one small head of broccoli  finely chopped

One large onion, diced

Two cloves of garlic, crushed

Two tablespoons of chopped Italian parsley

One tablespoon of chopped fresh sage

One teaspoon of fresh thyme

Two tablespoons of vinegar

Two tablespoons of nutritional yeast

One box of firm tofu, broken up by hand

Two tablespoons of agar flakes




Olive oil


In a food processor, pulse two cups of rolled oats or oat flour, walnuts, avocado and ½ teaspoon of salt. Add a small amount of water at a time until you get a dough that is slightly crumbly. Take the mixture and press into your pie dish to cover sides completely.  Chill in fridge.

In a medium pot, heat one teaspoon of oil.  Add onions and garlic. Add ½ teaspoon of salt and ¼ teaspoon of black pepper.  Cook until onions sweat.  Add the spinach, parsley, sage, thyme, vinegar,  4 tablespoons of water and bring to a boil, add the agar flakes and cook for 2 minutes.  Then mix the spinach or broccoli mixture with the tofu, 1/2 teaspoon of turmeric and the nutritional yeast thoroughly.  Place in the pie dish and bake at 350 degrees for 40 minutes.
