Quinoa or millet Tabouli

Prep time: 20 minutes

Serves: 10


Quinoa or millet

Juice of two lemons

Four scallions, finely chopped

One large cucumber, finely diced

15 cherry tomatoes, halved

1/3 cup of finely chopped Italian parsley

ΒΌ cup of finely chopped mint leaves

Ten leaves of basil, finely chopped



Bring four cups of water to a boil.  Add quinoa or millet and turn down to simmer.  When quinoa is done, it will form tiny spirals from each individual germ seed.  Remove any excess water and place quinoa in a large bowl to cool.

Add all the remaining ingredients to the quinoa and toss well.  Add salt and pepper to taste.
