Kale Salad with Berry Dressing




Eating green leafy vegetables is crucial.  Eating some raw vegetables is also important.  This salad combines both.  Many restaurants are serving kale salads like this.  We make it a point to eat this before dinner once a week.

Ingredients:

One bunch of kale, rinsed thoroughly and chopped finely

One small onion, finely chopped

½ cup raw chopped walnuts, lightly toasted

Two large strawberries, crushed

Handful of raspberries or blackberries, crushed

1/3-½ cup of red wine vinegar


one tablespoon of raw, unsalted pumpkin seeds, pulverized in a spice grinder

Salt

Pepper

two pitted dates, chopped

 

In a blender, puree the berries, vinegar, pumpkin seed powder, and dates.  In a large salad bowl, place the kale, walnuts, and onions.   Toss with the dressing.  Add salt and pepper to taste.
