The plant-based Doctor Mom
Usually made with semolina flour but that is a refined grain. My versions use whole grains.
For family of four:
Combine 4 cups of flour like white wheat flour or spelt flour or semolina flour (any combination you like). Pictured here is pasta that we made which was 3/4 whole white wheat and 1/4 semolina.
Add one teaspoon of salt to the flour and two tablespoons of ground flax seed. Mix really well. Slowly add warm water and incorporate thoroughly. You want the consistency of a dough that is not too wet and can be rolled thin. Knead the mixture for about five minutes. Cover and let rest in your fridge for about one hour.
Have extra flour on hand when rolling. Take a large fistful of dough at a time. Roll into thin sections and pass though your pasta maker.
It only takes about one minute for the pasta to cook in boiling water.
