Grits or Polenta
Most grits sold are not whole grain. You can search for whole grain grits, called speckled hearts grits. Regular grits will take about 20 minutes to cook. Whole grain grits will take about 50 minutes to cook. If you cannot find whole grain grits, don’t fret. Regular grits are still a good way to add some variety to your meals, especially breakfast.
You can buy whole grain polenta more easily. The packet should not say ‘degerminated’. The same recipe can be used with both.
One cup of grits or polenta
4 cups of soy milk or almond milk or water
One teaspoon of onion powder
½ teaspoon of garlic powder
½ teaspoon of salt
¼ teaspoon of black pepper
Two tablespoons of nutritional yeast
In a medium pot, add all the liquid and begin to heat. When the liquid starts to boil, add the grits or polenta, while stirring constantly. Reduce the heat to low. Add all the other ingredients, mix well. Cover the pot and cook for about 20 minutes. Stir frequently.
When serving, you can add sriracha sauce or salsa.
