My cooking and eating philosophy is to make as much of my food from scratch as possible, to limit the amount of oil I use to a bare minimum.  All my recipes (except for a few desserts) make 8 servings and use less than a teaspoon of oil.  I don't fry anything.  I try to use whole grains whenever possible.  I don't use any animal dairy or animal meat.  For desserts, I use only fruit or low glycemic index sweeteners.  If I need to add some fat for a pie crust, etc I use avocados or pulverized nuts.  I use whole grated coconut instead of coconut milk or coconut oil for recipes needing coconut. I limit added salt.
