Cold Peanut Noodles

This is a Tyler Florence recipe that I love.  I have changed it slightly to increase the nutritional profile. I make it using whole wheat spaghetti and quinoa spaghetti instead of regular noodles.  It is a fabulous recipe that is an excellent summer dish to enjoy at your next cookout.

One box of whole wheat thin spaghetti or thin linguini noodles or quinoa spaghetti noodles.  Boil with one tablespoon of oil added to water, drain with cold water, and set aside.

In a blender, grind the following together until you have a thick sauce.

1/2 inch piece of ginger, minced

Three cloves of garlic, crushed

One tablespoon of siracha sauce (optional)

three tablespoons of natural peanut butter

4 tablespoons of rice wine vinegar

6 tablespoons of soy sauce

6 tablespoons of hot water

One tablespoon agave nectar

Pour sauce over the cold pasta and toss well.  Add one tablespoon of sesame seeds, two tablespoons of chopped fresh cilantro, and one bunch of chopped scallions and ½ cup of chopped cucumber.  Toss well.
