Cabbage with apples and bourbon
I had a version of this at a restaurant in Lake Placid called Liquids and Solids. It was delicious. I made it in a slightly healthier way and kept all the flavor. Remember cabbage is a super food that your good gut bacteria love.
One head of red cabbage, shredded into thin strips
two medium apples, chopped with peel
1/2 cup of apple cider vinegar
1/4 cup of bourbon
chili powder (optional)
Puree the apples with the bourbon and apple cider until you get a smooth mixture. To a large pan on medium heat add the cabbage, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper. Stir, cover, and let cook down for five minutes. Add the apple puree. Cover and cook on low heat, stirring occasionally. Cook the cabbage until very soft. Adjust salt and pepper to taste. For a little extra kick, add 1/4 teaspoon of chili powder at the end and mix well.
