The plant-based Doctor Mom 

This is a recipe shared to me by a patient of mine, Doreen.  I was so elated to receive it that I wanted to share it right away.

Fat calories: negligible

1 large head of red cabbage shredded

1 large onion thinly sliced

2 large potatoes (I used fingerlings, but you could use any type of potato)

2 green apples (or any other apples you like) peeled

and diced1/3 cup of balsamic vinegar

1 tablespoon of cinnamon

1 teaspoon of oil


Cut up and boil potatoes in salted cold water.  When they are done, put them to the side to cool.
In a deep pot add oil and thinly slides onion, sauté for about 3 minutes on medium heat.  Once the onions are "sweating", add salt and stir in 1/3 cup of balsamic vinegar, cook for another 2-3 minutes.  Add cabbage and diced apples to the pot and stir to coat well. Cover and cook on low heat for 30-40 minutes, stirring occasionally, and cook until your cabbage is tender, add potato to the pot to heat through.

You could probably make this in a crock pot too.
