We recently got back from a week long trip, visiting various colleges for my son.  One thing that struck me was how much college food has improved since I went to college.  Every college we visited made a point of emphasizing that they offered a wide range of healthy food options, including vegetarian and vegan options.

While visiting CMU in Pittsburgh, we stopped at one of their dining halls for some breakfast.  This recipe is one that I had that morning and have fallen in love with it.  It tastes awesome, takes one minute to make, but keeps me full for the entire morning, even with a five mile run.

Toast two slices of whole wheat, multigrain bread, or sprouted grain. Spread 1/2 tablespoon of peanut butter on both slices.  Cut half a banana into slices and layer them on one of the slices. On top of the bananas, layer about 1/4 cup of your favorite granola (I like Bob's Honey Vanilla Granola).  Place the other slice on top of the granola to create your sandwich.

So simple but really good.....and really energy packed.
