Blueberry Muffins


Every summer I go wild blueberry picking.  One of my favorite things to make are muffins


combine dry ingredients in large bowl

1 cup of spelt flour

1/2 cup of oat flour

1/2 cup of corn flour

Two tablespoons of chia seeds

one teaspoon of baking powder

1/2 teaspoon of salt

1/2 teaspoon of cinnamon

one cup of blueberries


Then add juice of 1/2 lemon

one teaspoon vanilla extract

2 and 1/2 cups of plant-based milk

4 tablespoons of agave nectar

mix well and let rest for at least 15 minutes or mix night before and store in fridge.


Bake at 350 degrees for 20 minutes in muffin tray
