Banana Muffins


Makes 12




Two cups of spelt flour, white wheat flour or whole wheat pastry flour

Two cups of smashed ripe bananas


one cup of unsweetened applesauce

One teaspoon of baking powder

One teaspoon of baking soda

½ an avocado, smashed


two tablespoons of raw pumpkin seeds

Three tablespoons of agave nectar (optional)

Two  tablespoons of chia seeds, soaked in 6 tablespoons of water

½ teaspoon salt

One tablespoon cinnamon

One teaspoon of vanilla

 

Mix all the above ingredients well.  Let sit for about 15 minutes then bake in muffin pan at 350 for about 30 minutes
