two cups of flour spelt flour or white wheat flour or one cup of spelt flour and one cup of oat flour or two cups of whole wheat pastry flour
3/4 cup of almond meal*
1/2 cup of ripe avocado smashed* (can omit)
1/2 teaspoon on salt
(in the Youtube video I am using coconut oil instead of avocado. Using the avocado will decrease saturated fat, so better for you)
In a food processor, mix dry ingredients well. Then pulse the avocado in slowly and then add the water slowly until you get a very slightly crumbly dough.
Cut into halves, wrap and chill. Lightly flour countertop and roll out to cover pie dish. Press one half into pie dish and set aside the other half for top.
For the filling:
Cut thinly 6 Granny Smith apples. Leaving the peel on adds to the nutrition
one tablespoon of cinnamon
1/2 teaspoon of salt
two tablespoons of tapioca
1/3 teaspoon of nutmeg
two teaspoons of lemon juice
2/3 cup of agave nectar
Combine all ingredients well and place in pie dish with crust on bottom. Then use second crust to cover the apples. Pinch the edges well. Pierce the top with knife. Bake at 350 degrees for 45 to 50 minutes.
